I have been baking since I was five years old, my first batch of cupcakes was for a kindergarten class party. My Mom & Grandma both made just about everything from scratch. My Mom was one out of 18 children, so my Grandma was all about homemade goods for her family. So thankfully she taught all her children how to cook and bake and that wisdom was handed down to me.
I'm not big on making yeast breads/rolls so I learned how to make biscuits from scratch early on, but I had never heard of this version. I have lived in the Nashville area for about 9 yrs now, and I just came across a recipe for 7-Up Biscuits, this recipe is so easy and they come out so fluffy and buttery, they are sure to become a favorite in your household. Last weekend, I tried a variation with adding Corn Muffin Mix - use one cup baking mix/one cup corn muffin mix and follow the recipe as listed. Yum! Perfect for the Fall season.
Give them a try and let me know what you think:
2 cups of Baking Mix (Bisquick, Jiffy - I like the Publix brand best)
additional 1/2 cup of Baking Mix to help in rolling out biscuits
1/2 cup of Sour Cream
1/2 cup of Sprite
1/4 cup of butter
Preheat oven to 450 degrees

- Mix the sour cream into your biscuit mix. You can use a fork, pastry cutter or the tools God gave you, your fingers. You just want to make sure that each portion of your {wet} ingredient gets coated with the dry mix.
- Stir in 1/2 cup Sprite. The dough will be very soft, don't worry.
- Sprinkle additional baking mix on to your counter.
- Knead and fold dough until coated with your baking mix. Pat dough out, (no rolling pin needed) and cut biscuits using a round biscuit/cookie cutter. I usually use a sharp knife and cut them into squares. Sometimes I make sure all the ingredients are well incorporated and spoon them into the pan with melted butter. Improvising is fine.
- Melt butter in a 9 inch square pan. I stick my pan and butter in the oven for a few minutes. Be sure to watch it or the butter will burn.
- Place cut biscuits on top of melted butter and bake for 12-15 minutes or until brown
